This is my current breakfast obsession. Garlic chives were the first herb to pop up in my garden and I had some leftover goat cheese. All I can say is – DELICIOUS!
Scrambled Eggs with Chives and Goat Cheese
Ingredients:
- Raw milk butter
- 3 eggs from pastured chickens
- A handful of chives, minced
- Pinch of sea salt
- Freshly ground black pepper, to taste
- A few dashes of Tabasco
- As much goat cheese as your heart desires
What to do:
Heat a non-stick skillet over medium heat and melt enough butter to keep the eggs from sticking. In a small bowl, scramble together the eggs, chives, salt, pepper, and Tabasco. Pour the egg mixture into the heated skillet and slowly move the eggs around the pan until they are cooked to your desired degree of doneness. Remove the eggs to a plate and top with the goat cheese. Mmm…
Yield one serving.
