I’m a huge fan of coconut water. It’s been called Nature’s Gatorade and for good reason. An 8 ounce serving boasts 250mg of sodium, 600mg of potassium, 60mg of magnesium, and 45mg of phosphorus. We love a glass after a hot day in the sun or a heavy workout, but lately I’ve been enjoying at least one glass a day just as a treat.
I made this smoothie today before an early morning yoga class which turned out to be pretty core intensive and sweaty. This Strawberry Electrolyte Smoothie powered me through and I wasn’t craving more food after class. I’ve added avocado for the good fats and some extra calories. I did not taste the avocado at all, so don’t be afraid to give it a try. It adds some lovely creaminess to this delicious smoothie!
I also added some gelatin for added protein. Feel free to leave the gelatin out if you are looking for a vegan or vegetarian option.
If you are following SCD, make sure to use the seeds from a vanilla bean instead of regular vanilla extract. The vanilla seeds will make this even more decadent!

- 1 cup of coconut water
- 1 cup of frozen strawberries
- 1/2 of a small avocado
- 1/2 teaspoon vanilla extract or seeds from 1/4 of a vanilla bean
- 1 Tablespoon gelatin (Make sure to use the gelatin that dissolves in cold liquid like this one or this one.)
- Place all of the above ingredients in a blender and process until smooth.
- Pour into a glass, add a fun straw, and enjoy!!
