Some mornings call for eggs and bacon and some mornings call for a really good smoothie. I try to change up breakfast throughout the week. First of all so I don’t get bored, but secondly to change up the nutrition my body is receiving. Today’s recipe came about when I had a pile of ripe kiwis sitting on my counter top. In order to save them, I cut them up and tossed them in the freezer. The next day I grabbed a lime and an avocado and boom, the Kiwi Lime Smoothie was born.
I love smoothies on the mornings that I might be running a little late for work or when I am headed to yoga class within an hour or two. They blend up so quickly and fill me up for the morning without weighing me down. The key ingredients for keeping me satiated are good fats from avocados or coconut and protein from hydrolyzed collagen. In this recipe, the avocado and collagen also lend a nice creaminess to the smoothie.
This Kiwi Lime Smoothie is a little tart from the blend of kiwi and lime, but it’s balanced with just enough sweetness from the coconut water. Even if you are not a fan of coconut water, trust me you will not taste it in this smoothie.
Just the sight of this smoothie makes me happy. The color, the tropical scents, and the flavors make me think of a warm summer day on the beach!

- 1 cup coconut water
- 2 kiwis cut into one inch pieces and frozen
- 1/2 of a large avocado or 1 small avocado
- Juice from 1/2 a lime
- 2 Tablespoons hydrolyzed collagen (omit for vegan)
- 2-3 ice cubes (optional)
- Place all of the above ingredients into your blender and process until smooth.
- Pour into your favorite glass and enjoy!
