It’s that time of year when everyone’s garden starts exploding with zucchini! Of course I love a fresh zucchini sautéed in some butter or made into zoodles, but I also love it in a sweet application like zucchini bread. Today I took one of my most popular recipes, Coconut Flour Zucchini Bread, and added a little twist. I’m sharing this fun new version, Chai Spice Zucchini Bread, over at Delicious Obsessions!
If you are overwhelmed with garden zucchini or just can’t pass up a good deal on them at the farmer’s market, get out your food processor and shred it up! Portion it out and freeze for use later in the year. I love using my freezer stash for a taste of Summer when Fall and Winter hit.
If you haven’t tried my Coconut Flour Zucchini Bread yet, it’s a simpler version of the Chai Spice Zucchini Bread. More of a straight up traditional flavor. However, if you love the fun and spicy flavors of Chai tea, you will love today’s Chai Spice Zucchini Bread version! I keep a jar of my homemade Chai Spice Blend in the pantry for recipes like this one, but you can also just add the spices as needed to the recipe.
A quick note on my favorite products used to make Chai Spice Zucchini Bread:
As mentioned above, having a jar filled with Homemade Chai Spice Blend makes for quick measuring when putting together this recipe. I love to whip up a few different spice blends and then store them in these jars for use over the next several weeks. Makes meal prep a snap!
I find that coconut flour breads tend to stick to baking pans even when well greased and floured. To make a pretty loaf that releases easily, I always line my baking pans with this unbleached parchment paper.
