Pomegranates are one of the prettiest fruits and whenever I see one in the grocery store I’m so tempted to buy it. Not only are they beautiful, but I love the flavor too! However, I am not a fan of seeding them. So the last time I was contemplating putting a pomegranate in my cart, it hit me – grab some organic pomegranate juice and make some gummie treats. All of the delicious flavor of a pomegranate without the trouble of seeding it. I added a little ginger and Meyer lemon juice and here we have Pomegranate Ginger Gummies!
Gummie treats are so fun and enjoyed by just about everyone. We loved these types of treats as kids and I don’t think we ever outgrow that nostalgia. The gummie treats that I make these days are so much healthier than those of my past. Grass-fed gelatin is the basis of all of my gummies, as are real food ingredients like fruits and coconut.

You could make this recipe in an 8×8 inch baking dish and then cut into shapes or use fun cookie cutters. I love using a decorative mold for the pretty hearts you see in the photos. I purchased mine from Michael’s but here is a nice heart shaped version and a flower version that I own and love!
