Spring is around the corner and I’m dreaming about all the Summer produce that will soon be taking over the farmer’s market tables! I’ll have to be patient and wait a few months for that bounty, but in the meantime, I’m more than happy to snag some more cold weather vegetables and make the most of them before they are gone. One of my favorite cold weather veggies is the good, old Brussel sprout. Shaved Brussels Sprouts with Lemon and Toasted Almonds is the perfect way to take this humble vegetable up a notch with a light, Springtime preparation!
Don’t get me wrong, roasted Brussels sprouts are amazing. However, as the days get a little brighter and tad warmer, I like to start lightening up our meals a bit. Sautéing the Brussels sprouts allows them to be served crisp-tender. A splash of lemon juice and a dash of zest really wakes up the dish.
Shaved Brussels Sprouts with Lemon and Toasted Almonds is a flavorful side that goes so well with a simple main dish – some baked fish, grilled chicken, or even a burger patty. Leftover Brussels sprouts are absolutely delicious cooked into some scrambled eggs the next morning!

My mandoline is my go-to slicer for this dish. Make quick work of the process and get perfectly even shreds (for the perfectionist in me, this is key!!). Not feeling the mandolin? A really good, sharp knife will do the trick too!
This is my favorite brand of avocado oil. I love it for the high smoke point, so it’s perfect for roasting and sautéing!
